Mmmm … blueberry pie! One of my favorites. I didn’t make this for any special event, but because I wanted to practice my pie crust skills.
- The Best Blueberry Pie (CI)
- I used frozen organic blueberries from Trader Joe’s (they’re my “go to” blueberries for blueberry muffins) and they worked so well in this recipe.
- The Foolproof Pie Crust recipe from Cook’s Illustrated is a good recipe, but instead of adding ALL the liquid, I added a bit at a time and ended up only using half of the total. My pie crust was good, though, but less flaky then I expected. I may want to try another pie with their regular pie crust recipe (not the foolproof recipe which includes vodka) to see if I can get it flakier.
- This was my first ever double-crust pie and I have to say I think it worked out pretty well. Here’s a picture of the finished product: Blueberry Pie
